Caramel Shortbread Cookies

With only 30 minutes of preparation and cooking time, these cookies can be made in a pinch for any festive occasion. Special tip: for extra flavour and flair, try adding a taste of Himalayan sea salt or any other large-crystal salt on top of the cookie, for a “salted caramel” spin.
