Autumn Treats

I hope everyone had a relaxing Thanksgiving weekend with family and friends! One problem: are you craving more of that pumpkin pie? Fall is definitely the season where I love to get comfy on the couch, watch movies, and eat warm, baked goods – especially while studying for midterms. Luckily, I’ve stumbled upon a few healthy dessert recipes, so I don’t feel guilty about giving in to my sweet-tooth cravings. These 2 recipes are super simple, quick, nutritious, and only require a few ingredients from your pantry!

Banana Oat Cookies

The kick of cinnamon in these cookies really makes them an autumn treat!

Yield: about 10 cookies

Ingredients: 3 bananas, 1 cup quick oats, 1 tsp cinnamon, 1 tsp vanilla, optional: handful raisins or craisins

Directions: Mash the bananas (you can leave some clumps), add the other ingredients, and mix! Drop tablespoons of the mixture onto a baking sheet lined with parchment paper, and bake for 20 minutes at 350° F.

Cocoa Muffin-Brownies (Flourless!)

If you’re a chocolate lover, these should be a hit! You can make them into muffins or brownies.

Yield: 12 muffins

Ingredients: 4 bananas, 2 cups almond (or peanut) butter, 2/3 cup cocoa powder, optional: 1/4 cup maple syrup

Directions: Mash the bananas, add the other ingredients, and mix! Pour the batter into a muffin tray or cake pan and bake for 20 minutes at 350° F.
